Welcome to Turkey, a fascinating country at the crossroads of three continents: Asia, Europe and Africa. Every epoch, every culture and every migration has left its legacy here with plants that have enriched the local flora. This is how Turkish forests became an exceptional place for picking mushrooms.

We often imagine Turkey to be a dry, arid place but the north of the country near the Black Sea has a fresh, damp climate and a remarkable woodland diversity. Beech, oak, hornbeam, chestnut, ash and maple trees grow at mid-altitude whilst black, Scotch and umbrella pines, spruce, fir, cedar and juniper trees pour down the rocky slopes to the sea. The forests grow semi-wild and the Turkish government, aware of this priceless legacy, has launched huge preservation and restoration projects for its forest areas. In the north-east of the country, a Biosphere Reserve programme has been launched in compliance with UNESCO standards. In these preserved regions we pick the best morels in the world, firm and delicious, precious morsels with a hint of hazelnut and a subtly woody edge.
